What’s for dinner?

Looks like I am entering a phase of wanting to bake everything I see on pinterest – that site makes me so hungry!!

Dinner tonight – I made Black Bean Crema with Meatless Meatballs - recipe re-posted below (in sandwiches with tomato sauce) and the quinoa/brown rice combo that is featured with the crema. Thanks HEAB for posting about it and making me want it – delish!!

Meatballs are all the rage these days, and vegans won’t miss out with this recipe from The Complete Guide to Vegan Food Substitutions by Celine Steen and Joni Marie Newman.

MEATFREE BALLS

4 ounces unsweetened tomato paste

2 tablespoon peanut oil

2 tablespoon nutritional yeast

1/4 cup seitan (wheat gluten) -veggie crumbles worked

1 teaspoon onion powder

1/4 teaspoon garlic powder

1/2 teaspoon fine sea salt

1/4 teaspoon ground black pepper

1/2 cup panko bread crumbs

1/4 cup barbecue sauce – I used tomato sauce.

Preheat oven to 375 degrees. Line a small baking sheet with parchment paper.

Combine the first eight ingredients in a medium bowl. Add bread crumbs and mix until well-combined.

Divide and shape mixture into eight 1-inch balls. Place the balls in the center of the parchment paper on baking sheet; fold paper over balls to enclose them entirely. Arrange wrapped balls folded side down.

Bake for 20 minutes, or until golden brown. Unwrap and coat with barbecue sauce. Bake unwrapped for 8 more minutes.

 

Then I made the graham crackers from Salad-in-a-Jar:  same baker as the poptarts and they were good. Of course they do not look like hers but the kids ate them so they get my vote!  I used all whole wheat pastry flour and ended up with a dough that was too dry. Also I subbed in a chia egg for the egg – and I needed water at the end. Try the recipe straight up. It’s probably much better!

Ingredients:
1 1/4 cups all purpose flour
1 cup whole wheat flour
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 cup unsalted butter, slightly firm
1/3 cup brown sugar, lightly packed
3 tablespoons sugar
3 tablespoons honey
1 large egg
1 teaspoon vanilla extract

Now I really want some of Mama Pea’s smoked maple donuts again. So good!

  1. I totally understand those baking crazes, that happens to me too where I just want to bake and bake. Those “meat” balls sound really good, too. Did your kids like them?

  2. Hmmm, faux meatballs… sounds good! I bought TVP and realized I should have gotten vital wheat gluten instead… hmm.
