Meal planning, wooo.. let’s try to get back on this! For Christmas, we got a bread maker, new crockpot since ours went missing in the move, and ice cream maker (yikes!) and have been churning out some good things over here! Not so good for the waist line – how yummy does fresh bread smell? Can’t resist!!  I’ve also been experimenting with healthier ice cream recipes and love the ice cream maker so far! The bread maker has been great for making sandwiches and even pizza crust! Love it!

Ice cream recipes to share?

MEAL PLANNING

Sunday – Italian- pasta/meatballs
Monday  - Crockpot Tikki masala with rice
Tuesday – Veggie Lasagna -leftover from the freezer

Wednesday - Spinach and mushroom frittata – easy breakfast for dinner + Bagel

Thursday – Vegetable Greek Lentil Soup  & Quesadilla

Friday – Pizza
Saturday – winging it/leftovers
Let’s see how this goes. I have been loosely scheduling dinners but definitely spending so much at the grocery store! I really would like to get back into a budget and accounting for everything.

 

The S.I. Joint - 

Here’s what I have been having issues with:

Yikes!! Back in college, I had this same issue when I was rowing, and now after using flippers throughout the second half of my pregnancy with Lindsay, moving boxes and doing lots of hard core circuit workouts and intervals on the treadmill, I have made this joint angry! It is a nagging pain that I feel ALL THE TIME!  I have to tone down my intensity level and get treatment and hopefully this will get better soon! Ouch!  I did get outside in the great weather we are having and get in a run yesterday, and it felt great!

 

Nutrition Info 

If you read Oh She Glows or have seen it elsewhere, look out for this ingredient in your non-dairy milks and other items : Carrageenan. It has been linked to cancer in animals. What hasn’t?!!  In college I ate and drank a ton of soy – that will lead to cancer, prior to that, lots of cow’s milk. Now almond and coconut milk – usually Silk Pure Almond but occasionally So Delicious or Almond Breeze – now these have to be avoided. What kind of non-dairy milk do you use?

She posted a recipe for an alternative you can make at home – Oat milk. I’m going to try it out and report back!

  2. Yep, I’m bummed about the almond milk, though in general I drink the kind without that stuff, though it’s a bit more expensive… blah.

    How was the slow cooker tikka masala? Just pinned it:) Also, do you have any “healthy” bread recipes to share? I too received a bread machine for Christmas!
